Recipe(tried): Greek Vegetable Dish

Greek Vegetable Dish

6 zucchini, sliced
1/2 lb. green (string) beans, ends snapped off and cut into 1 1/2 to 2 in. lenghths
3 carrots, peeled and sliced
3 stalks celery, cut up or sliced
3 potatoes, peeled & sliced if using baking type potatoes. If using red potatoes, just wash and slice
3 cloves garlic, minced
1 onion, chopped
1/4 c. olive oil
1 (8 oz.)can tomato sauce or 3 tomatoes, cut up

Saute onion in olive oil. Add all ingredients and mix carefully. Place in a 9 inch X 13 inch casserole dish. Cover. Bake at 325 degrees F for 1 hour. This may take longer than 1 hour. You may want to try baking this at 350 degrees F. Just be careful that the vegetables don't become dry and burn as a result. I haven't made this in awhile but I think that I had trouble getting the green beans cooked. You could blanch them for 2 or 3 minutes before you combine them with the other vegetables, then continue with the recipe as written.
