Recipe: Green Beans and Fried Breadcrumbs (Italian)

GREEN BEANS AND FRIED BREADCRUMBS

2 cups fresh bread crumbs, coarsely crumbled
10 ounces fresh green beans, trimmed and cooked
4 ounces butter
salt and freshly ground black pepper (to taste)

Preheat the oven to 450 degrees F. Lay the crumbs on an oven tray and roast for 5 to 6 minutes, until golden.

Cook the beans in boiling salted water until al dente (4 to 6 minutes).

Meanwhile, melt the butter in a small skillet. Stirring, add the bread crumbs and continue to stir until they have soaked up the butter and turned brown. Season with salt and pepper.

Cover the freshly boiled beans with the breadcrumb mixture.

This is an excellent accompaniment for chicken or fish.
