Recipe: Grilled Skirt Steak Fajitas

Growing up on the Texas Border, Fajitas are a weekend tradition! In the grocery stores, look for "Beef Skirt" (Fajita in English). With a Knife, remove as much fat from the meat as possible. Season with salt, pepper, powdered onion, powdered garlic. Marinate in Italian Dressing and a little Worcestershire sauce for about one hour.

Then grill the meat for about 15-20 minutes. After the meat is done, slice against the grain of the meat (If you slice it the wrong way, the meat will be tough).

We also like to wrap an onion in foil (twice wrapped). Before sealing the foil, slice the onion to the midlle then pour a little beer over the onion, then seal the foil) Place the onion on the coals and remove after you are done grilling all your meat. The onion will be nice and soft.
