Recipe: Grouper Royal (not Abaco Inn)

GROUPER ROYAL

This recipe comes from the Bon Appetit Restaurant in Dunedin, Fl. If there is a dessert among entrees, this is it!

1 lb sweet butter at room temperature
1/2 cup light brown sugar
1/2 cup finely ground pecans
1 1/2 cups clarified butter
3 lbs fresh grouper fillets
Juice from 2 lemons
Salt & Pepper to taste
1/2 cup flour for dusting

Combine butter, brown sugar, and pecans. Mix until blended. Set aside.

Season grouper with lemon juice, salt and pepper. Dust lightly with flour.

Put clarified butter and grouper in a HOT saute pan. Cook until fish is golden brown on one side. Turn the fillets. Cover and finish cooking on low heat.

Remove fish to warm platter. Pour off excess fat and add pecan butter to pan. When butter begins to foam, pour over fillets.

Sprinkle with parsley and serve immediately.
