Recipe: Ham and Cheese Omelet Roll

HAM AND CHEESE OMELET ROLL

4 ounces of softened cream cheese
3 /4 cup milk
2 tablespoons flour
1/4 teaspoon salt
12 eggs
2 tablespoons mustard
1 to 1 /2 cups of shredded Swiss or Cheddar cheese, divided use
1 1/2 cups chopped ham
1/4 cup chopped onions, cooked
OPTIONAL FILLINGS ADDITIONS:
Sliced mushrooms, cooked
Sliced bell pepper, cooked
cooked crumbled bacon
Salsa or cheese sauce (for serving)

Preheat oven to 375 degrees F. Cut wax paper to fit jelly roll pan.

In a bowl, combine cream cheese and milk, whisk until smooth. Add flour and salt to cream cheese mixture. Set aside.

In another bowl, beat egg and then add cream cheese mixture. Pour mixture into prepared jelly roll pan.

Bake for 30 to 35 minutes or until puffy and golden.

Meanwhile, prepare choice of fillings.

Remove omelet from oven and spread with mustard and half the cheese, the ham and onion. Add any other fillings, if desired, and then sprinkle remaining cheese on top of filling.

Roll up in jelly roll fashion removing paper as you roll. If desired, garnish with additional cheese and let stand 5 minutes until cheese melts.

Serve with salsa or cheese sauce.

Makes 6-8 servings
