BAKED HAM AND CHEESE QUESADILLAS
4 large flour tortillas, divided use
1/2 cup shredded Monterey Jack cheese, divided use
8 oz. thinly sliced honey ham
1/2 cup diced tomatoes
2 Tbsp. chopped green onion
Black pepper (to taste)
Vegetable oil (for brushing tops)
mustard, mayonnaise or avocado dip (for serving)
Preheat oven to 425 degrees F. Lightly spray a cookie sheet with nonstick cooking spray.
Arrange 2 tortillas on cookie sheet and evenly top with 1/4 cup of the cheese. Top cheese with the sliced ham, tomatoes, green onion, then the remaining 1/4 cup cheese. Sprinkle each with black pepper, then cover each with another tortilla.
Brush tops with oil and bake in a 425-degree F oven for about 10 to 12 minutes, until golden brown and cheese is melted.
Cut quesadillas into wedges and serve with mustard, mayonnaise or avocado dip.
Makes 4 servings
