Recipe: Ham, Green Beans, and Potato Casserole, Southern Green Beans (repost) 2 recipe
Side Dishes - AssortedHi Neil:-) Here are two recipes, one that I found on the internet and one that was previously posted here at recipelink. I have not tried either one but both seem like they would be good. Good luck!
Ham, Green Beans, and Potato Casserole
2 slices bacon, just enough for flavor; coarsely chopped
1 ham slice, pre-cooked
1 pound potatoes, cubed
1 pound green beans, fresh
1/2 cup water
Fry bacon in skillet. Pour off excess grease, but leave enough to coat bottom of pan. Add ham and cook until heated through. Add potatoes, green beans and and water. Cover and cook until potatoes and green beans are done; approximately 15 minutes.
Serve with bread. Easy casserole; simple, but an old time favorite.
Southern Green Beans with Potatoes
From THE SUPPER BOOK by Marion Cunningham. Howard Wittenberg
(It seems to me that you could easily add ham to this recipe.)
4 slices smokey style bacon -- diced
1 pound green snap beans
(wash/ends trimmed)
(cut in 1 " lengths)
salt and pepper -- to taste
1 cup water
2 scallions -- sliced
2 medium potatoes -- peel/dice
This recipe is at odds with the current trend to just barely cook the beans, it cooks them to death, but it is very good.... Heat a Dutch oven or heavy-bottomed pot with a lid. Add the bacon, and cook over medium-low heat until lightly brown, about 5 minutes. Add the green beans, salt and pepper, and water. Cover and cook for about 10 minutes over medium-low heat. Add the scallions and potatoes, stir to mix, cover, and cook for 30 minutes more. Check once or twice to make sure the liquid hasn't all evaporated. Serve hot.
