I hope one of these recipes is the one! I haven't made either, but I think the first was a more popular version because I ran across a few copies of the same recipe with different names. Also, I think the egg in it will make for a better loaf. If anyone has a tried and true recipe for this to share we'd love to see it!
Pineapple Ham Loaf
From: Cookbook USA
Makes 8 serving
1 lb. smoked ham, ground
1 lb. lean fresh pork, ground
2 eggs
3/4 c. soft bread crumbs
3/4 c. milk
2 tbsp. catsup
8 slices pineapple, well drained
Mix together all ingredients except pineapple. Divide mixture into 9 patties. In a shallow baking dish, form a long roll, alternating a patty and pineapple slice. Begin and end roll with meat. First, bake for 30 minutes in slow oven (325 degrees), then baste with Spicy Glaze and bake for 1 hour longer, basting every 20 minutes.
SPICY GLAZE
Combine:
1 c. light brown sugar
1/4 c. pineapple syrup
2 tbsp. vinegar
1 tsp. prepared mustard
OR Another Spicy Glaze recipe:
Pineapple juice
Brown sugar
1 tsp. ground cloves
1 tbsp. dry mustard
Serve 1 patty on a slice of pineapple. Pineapple Ham Loaf (another version)
1 lb. ground ham
1 lb. ground pork

2 tbsp. ketchup
Salt and pepper to taste
1 (20 oz.) can sliced pineapple
1 tbsp. mustard
1/2 c. brown sugar
Remove pineapple slices from can. Save juice.
Combine juice, mustard and brown sugar.
Stir and set aside.
Combine first 6 ingredients. Mix well.
Make large patties of the meat mixture.
Stand on end with pineapple slice between each patty in meatloaf pan.
Bake 1 hour at 350 degrees.
Add pineapple syrup and bake another 1/2 hour.
Serve each patty with a pineapple slice on top.
