Recipe(tried): Higbee's Muffins - Thank You: ABSOLUTELY TO DIE FOR!

Breads - Muffins, Quick Breads
Ray, these are just wonderful. I can't believe how good they are. I was in love with this place in the department store as a child and teen, and was so sad when they closed. (It became a Dillard's, but no more restaurant)

I did not change anything in your recipe at all! Thank you a million times times a million more.

GinaDi. :)

My Note:

If anyone remembers this place, they did not serve a breakfast, it was lunches and dinner's. You were always asked "muffin or roll"?, which usually came with your soup or salad. Of course, I always asked for the muffin.

If you try these, you will understand why. This is not super sweet because they were served as a bread to go along with your dining choice.

You could probably make it a bit sweeter if you are looking for a breakfast muffin. Even if you added a bit more sugar, if would not be sickeningly sweet like Einstein's bakery or Dunkin Donuts, actually all the newer chain style places.

These are pure heaven.

I didn't even need a muffin pan because the dough is quite pliable enough to stand alone with the foil muffin liners placed on an aluminum baking sheet. I liked this because the underside of the muffin tops did not burn.

Nice to have a muffin to bake if you are one that doesn't own a muffin pan. You can always buy the foil muffin cups at the store.

(I am so full right now. I only ate 2, my 13-year old son ate 5. (That's after a full dinnner.... LOL!)

Oh yeah, I forgot, I added a basket of fresh blueberries to one dozen because I wanted to use them up. They were SO GOOD!!!!
