Good morning. I will post this recipe for you. Feel free to subst. the orange ingredients if you wish for coconut, pineapple, apple,ete.
HONEY BUN CAKE
2 1/2 cups All purpose flour (Such as Gold medal or 1/2 of this flour and 1/2 Cake or pastry flour)
2 1/2 teaspoons of baking powder
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup honey
1/2 cup vegetable oil (I SUGGEST CORN OIL)
1 cup granulated sugar
4 large eggs
2 1/2 teaspoons Max grated orange zest
1 cup orange juice, divided use
PREHEAT OVEN TO 350 DEGREES F. LOWER HEAT TO 325 DEGREES WHEN PLACING PAN INTO OVEN.
Grease and flour a 9 x 13 inch baking pan.
Sift the first top 5 ingredients 2X.
Mix honey and oil together till blended, add sugar. Then add eggs 1 at a time and mix for 45 seconds each. Then add zest.
By hand using a large spatula mix in the flour combo in 3 segments, begin with flour then add 1/2 cup orange juice and repeat till complete. Mix till no flour is showing visibly.
Pour into the baking pan and place in the middle of the 350 degree F oven. Reduce oven temperature to 325 degrees F. After 30, minutes turn the pan around to insure even baking. Bake till done. Cake will begin to pull away from it's sides when done.
Place pan on a cooling rack for about 1, hour.
