Here is a tried and true apple pie filling recipe, just one word of advice, don't try and short cut by not cooking the sauce, it doesn't work. It'll all settle on the bottom
of the jar in a blob. (Can you guess that experience speaks!!!!)
APPLE PIE FILLING
4 1/2 cups sugar
1 cup cornstarch
6 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. cloves (optional)
1 tsp. salt
8 cups water
3 Tbsp. bottled lemon juice
5 1/2 to 6 lbs. apples, pared and sliced
10 cups water
Blend sugar, cornstarch, cinnamon, nutmeg and salt in large pan. Stir in 8 cups water. Cook and stir until bubbly and thick.
Add lemon juice. Fill sterilized jars with pared and sliced apples. Fill with hot syrup to 1/2-inch from top.
Process quarts 20 minutes in hot water bath. Enjoy
