Recipe: Homemade Chocolate Pudding and Pie Filling Mix with Variations

CHOCOLATE PUDDING AND PIE FILLING MIX

2 cups granulated sugar
1 cup unsweetened cocoa powder
2/3 cup cornstarch

Combine all ingredients and store in container with tight-fitting lid.

Makes 3 cups mix, sufficient for 12 individual servings of prepared pudding.

TO PREPARE:
(For each 1/2 cup of Chocolate Pudding Mix, use 1 1/2 cups milk.)

Combine 1/2 cup dry Chocolate Pudding mix, 1 1/2 cups milk, and 4 tsp margarine in small saucepan, and heat over very low flame, stirring constantly, until mixture boils. Boil gently, stirring, for 1 minute. Pour into 2 individual serving dishes. Refrigerate.

VARIATIONS:

MINT:
Add 1/4 to 1/2 tsp mint extract after removing from heat.

MOCHA:
Add 1 tablespoon instant coffee powder or crystals before cooking.

WITH NUTS:
1/2 cup of chopped nuts can be added before pouring into serving dishes.
