RAINBOW FRUIT DELIGHT
1 pkg. (4 servings) orange gelatin
1-1/2 cups boiling water
1/2 cup mandarin oranges, drained
2 cans (12 oz. each) evaporated milk, chilled
1 pkg. (4 servings) lemon-flavored gelatin
1/2 cup crushed pineapple, drained
1 pkg. (4 servings) strawberry-flavored gelatin
1/2 cup (about 8) frozen strawberries, thawed, drained
Coat 9-by-5-inch baking pan with nonstick cooking spray.
MANDARIN ORANGE LAYER:
In small bowl, dissolve orange gelatin in 1/2 cup boiling water. Let stand 10 minutes. In blender, whirl dissolved gelatin, oranges and 1 cup evaporated milk 10 seconds or until well blended. Pour into loaf pan. Refrigerate 30 minutes or until set.
PINEAPPLE LEMON LAYER:
Follow same process with lemon gelatin and crushed pineapple. Pour mixture over Mandarin Orange Layer. Refrigerate 30 minutes or until set.
STRAWBERRY LAYER:
Follow same process with strawberry gelatin and strawberries. Pour over pineapple layer. Refrigerate at least 4 hours or overnight.
TO UNMOLD:
Run point of knife around top of pan. Dip pan into large pan of warm water 15 to 20 seconds. Lift from water. Place serving platter on top of pan. Invert mold and platter together, shake slightly to loosen. Gently remove mold.
Slice and serve.
