2 c flour
2 c ricotta cheese
2 eggs
l or 2 tsp oil for boiling water
1/2 tsp salt
pur flour, ricotta and eggs in bowl and blend into large ball. place dough onto a floured borad and roll into 1 inch pieces with knuckle or index finger. form a dent in the center of each. drop into lots of boiling water. They will sink and cook about 8 to 10 mins. Drain and place on a large platter, top with your favorite sauce. sprinle on grated parmesan or romano cheese and chopped basil if desired.
Homemade Gnocchi
3 med potatoes
2 eggs
1 1/2 c flour
12 tsp salt
peel and cut potatoes until you can pierce them easily with a fork, but dont overcook. drain and put in bowl, add eggs and whip till fluffy. add flour, turn on a floured board and knead dough with hands till smooth, adding more flour if necessar to prevent sticking. take small handful of dough and with your hands roll it out into long rope. cut the rope into 1 inch pieces and then flatten each piece slightly. with index finger gently dent the center. Drop into lots of boiling water and cook 8 to 10 mins. when they float they are ready. drain and place on platter, serve with sauce and grated cheese and sprinkle fresh basil on top if desired.
