Recipe: Hominy Baked with Cheese

Hominy Baked with Cheese
From: Frugal Gourmet
Serves 6

3 cups cooked Hominy
2 large yellow onions, peeled and sliced thin
1 cup sour cream
1 cup grated cheddar cheese
2 tbsp. butter
salt and pepper to taste

Place 1/2 the hominy in a greased baking dish. Season with salt and pepper. Heat a frying pan, add butter and saute onions till clear. Mix the onions and sour cream and place 1/2 of this over the hominy. Top with 1/2 of the cheese and repeat the second layer topping with remaining cheese. Bake uncovered at 350 degrees for 40 minutes.
