Recipe: Apple Snacking Cake (Nilla Vanilla Wafers, 1983)

APPLE SNACKING CAKE

25 Nilla Vanilla Wafers, finely rolled (about 1 cup crumbs)
1 cup all-purpose flour
1 cup sugar
2 teaspoons baking soda
1/4 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup margarine, melted
2 eggs, slightly beaten
2 cups chopped apples
3/4 cup chopped walnuts
Confectioner's sugar (optional, for garnish)

Combine vanilla wafer crumbs, flour, sugar, baking soda, salt, cinnamon and nutmeg. Blend in margarine and eggs; stir in apples and walnuts. Spread in greased and floured 9x9-inch pan.

Bake at 350 degrees F for 40 to 45 minutes.

If desired, dust with confectioner's sugar. Serve warm or cold.

Makes 9 servings
