HONEY-PECAN SALMON
1/4 cup whole wheat panko breadcrumbs
1/4 cup chopped pecans
2 tablespoons plus 1 teaspoon honey
2 tablespoons mustard
3 (5 oz each) salmon fillets
Preheat your oven to 425 degrees F.
Mix breadcrumbs, pecans, honey and mustard. Spread the chunky mixture evenly on top of the salmon fillets in a baking dish.
Put the salmon in the oven for 10 to 12 minutes, or until the topping is golden brown.
Makes 3 servings
