Recipe: Hoosier Egg Casserole

Hoosier Egg Casserole
Alt.support.diet.low-carb/Nadine/1999

Makes 2 hearty servings
Per serving: 804 calories; 5.4 gram carbohydrates
Alt.support.diet.low.carb/Nadine/1999
1 tsp. butter
4 hard-cooked eggs, coarsely chopped
1 cup diced celery
1/4 cup coarsely chopped walnuts
1 green onion diced
1 Tbsp green pepper, diced
1/4 tsp. salt
pepper to taste
1/2 cup mayonnaise
1/2 cup grated sharp Cheddar cheese

Butter a 1 qt. casserole. Combine eggs, celery, walnuts, onion, green pepper, salt and pepper and mayonnaise in a bowl. Toss lightly together
with two forks. Pour into buttered casserole. Sprinkle with cheese. Bake in a preheated 350 degree oven for 30 minutes.
