Recipe: Three Cheese Casserole

Three Cheese Casserole

Makes 2 hearty servings
Per serving: 615 calories; 9.8 gram carbohydrates

2 Tbsp. finely chopped onion
1 Tbsp. finely chopped green pepper
3 Tbsp. finely diced celery
1 Tbsp. butter
1/2 cup heavy cream
1/2 cup half & half
1 small carrot, thinly sliced
3/4 cup cooked chicken breast, cubed
Salt and pepper to taste
Dash paprika
1 cup cooked cauliflower florets
1/4 lb. Swiss cheese, sliced

In a saucepan, melt the butter. Add onion, pepper and celery, and saute until tender. Slowly add cream and half & half, and cook over low heat, stirring occasionally, until mixture thickens slightly. Add carrots, parsley, chicken and seasonings, and simmer for 15 minutes, stirring occasionally. Add cauliflower. Place mixture in a shallow casserole. Top with cheese slices. Bake in preheated 350 degree oven until cheese melts, about 15 minutes.
