Recipe(tried): Hot Chicken Casserole and Southwest Chicken Casserole

Hi Heather,
It sounds like you and I are in the same boat. The funny thing is, my husband is more picky than my two girls. I hope you find one of theseto help.

Hot Chicken Casserole

2 cans cream of chicken soup
1 1/2 cups grated cheddar cheese
1 cup mayonnaise
1 tsp. salt and pepper

COMBINE ABOVE IN A LARGE BOWL

4 cups bite size cooked chicken
2 cups celery, chopped
1 cup peas

Mix in to bowl with soup mixture above and pour in baking dish. Top with a thick layer of crumbled potato chips or chow mein nodles. Bake for 45 mins or until hot and bubbly.

SOUTHWEST CHICKEN CASSEROLE

2 cups cut up chicken
1 1/2 cups shredded cheddar cheese
1 cup sour cream
1 can corn drained
1 can peas
1 can carrots
1 can cramy chicken soup
2 cups bisquick
1 1/2 cups milk
2 eggs

Layer chicken, vegies, sour cream and soup in a greased baking dish. Mix remaining ingredients until smooth and pour over casserole. Bake about 35 minutes or until knife inserted in center comes out clean.
