Recipe(tried): Enchilada Casserole and MORE

Main Dishes - Casseroles
Here are some of my favorites. Most of these are old family recipes. Hope you enjoy

Mexican Lasagna
Preheat 400F

1 can beans, pinto, pink or black drained and rinsed
1 can diced tomatoes
1/4 Cup cilantro, chopped
1 clove garlic, finely minced
1 (4 oz) can chopped green chilis
2 Cups frozen corn kernels, thawed
2 green onions, minced
1/2 tsp cumin
1/2 tsp oregano
8 corn tortillas
1 1/2 Cups grated Monterey Jack Cheese

In a large mixing bowl combine the beans, tomatoes, cilantro, garlic, chilis, corn, green onions, cumin and oregano. Mix thoroughly. Oil a 2 qt. Casserole dish and line with 4 tortillas, overlapping if necessary. Spread half of bean mixture in a layer over the tortillas. Sprinkle with half of cheese. Repeat with remaining tortillas, beans and cheese. Bake for 12-15 minutes or until cheese is bubbly. Let stand 1-2 minutes and serve.

Chicken and Broccoli Casserole

Preheat 350F
3 pkg. Frozen broccoli spears
4 chicken breast, cooked and cubed
2 cans cream of chicken soup
1 Cup mayonnaise
1 tsp lemon juice
1/2 tsp curry powder
1/2 Cup cheddar cheese, shredded
1 sleve Ritz Crackers
cooking spray

Cook broccoli until tender. Arrange in a 9x 13 pan that has been greased. IN a bowl combine soup, mayo, lemon juice and curry powder. Spread mixture onto broccoli. Sprinkle with cheese. Then sprinkle crushed Ritz crackers on top and spray generously with cooking spray bake 30-40 minutes until heated through and cheese is melted.

Enchilada Casserole
Preheat 325F

1 lb. ground beef
1 onion
1 can cream of mushroom soup
1 1/2 Cups grated cheddar cheese
1 can enchilada sauce
2 small bottles taco sauce
1 Pkg. tortillas cut into small pieces

Brown meat and onions and drain well. Add sauce and soup to meat mixture. Layer ingredients in casserole dish ending with cheese on top. Bake 30 min, or until cheese is melted and bubbly. Makes 10 servings.

Cheesy Pizza Casserole
Preheat 350F

3 cups uncooked pasta
1 jar spaghetti sauce
1/2 lb. Italian sausage or ground beef
1 Cup shredded mozzarella
1 can mushroom stems and pieces
1/4 Cup sliced olives

Cook and drain pasta as directed on package. While pasta is cooking, brown sausage (hamb) and drain well. Mix pasta sausage and remaining ingredients except cheese in ungreased casserole dish. Cover and bake about 30 min or until hot and bubbly. Sprinkle with cheese. Bake uncovered about 5 minutes or until cheese is melted. Makes 12 servings.

Deep-Dish Pizza Casserole

1 pound ground round
1 (15 oz) can chunky Italian-style tomato sauce
cooking spray
1 (10 oz) can refrigerated pizza crust dough
frozen spinach
red bell pepper
mushrooms, sliced
6 oz part-skim mozzarella cheese -- divided in half

Cook meat in a medium nonstick skillet over medium-high heat until browned, stirring until it crumbles. Drain, if necessary and return to skillet. Add tomato sauce, and cook until heated. While meat cooks, coat a 13x9x2-inch baking dish with cooking spray. Unroll pizza crust dough, and press into bottom and halfway up sides of baking dish. Line bottom of pizza crust with 3 slices mozzarella cheese. Top with meat mixture. Bake, uncovered at 425 for 12 minutes. Top with remaining 3 cheese slices, and bake 5 additional minutes or until crust is browned and cheese melts. Cool 5 minutes before serving. Makes 6 servings.
