Recipe: Hot Monterey Rice Salad (topped with crushed corn chips)

HOT MONTEREY RICE SALAD

1 pound lean ground beef
2 teaspoons garlic salt
1/4 teaspoon Tabasco pepper sauce
1 tablespoon lemon juice
1 cup mayonnaise
3 cups cooked rice
2 cups sliced celery
1 cup chopped green bell peppers
1 cup chopped onion
3 medium tomatoes, cut into eighths
1 cup crushed corn chips (for topping)

Cook meat in lightly greased skillet until done.

Add garlic salt, pepper sauce, and lemon juice to mayonnaise. Stir into meat mixture with remaining ingredients except corn chips. Turn into a greased 2-quart casserole. Top with corn chips.

Bake at 375 degrees F for 25 to 30 minutes.

Makes 8 servings
