You can tomatillos exactly like regular red tomatoes. That includes adding acid in the form of bottled lemon juice or citric acid. It depends upon what method you use as to processing times.
The best thing would be to use a current Ball Blue book or one of the university extension sites. The best and most reliable is the Univ. of Georgia.
