In regards to the question about freezing tomatoes. Yes, you can freeze them. The way I do it is to scald the tomatoes in boiling water for I don't know approximately 1 minute or so. remove them from the hot water and then submerge into a bowl of ice water. The whole reason for doing the hot water dip is to loosen the skin so their easier to peel. So keep in the hot water just long enough to loosen up the skin. Try it a few times and you'll get the hang of that part.
Anyway you can cut them up into halves or chunks or leave them whole. Just make sure they have cooled when you put them in the freezer.
Now my mother on the other hand just washes them and puts them in the freezer with the skin on. When she uses the in her soups, stews and sauces she just drops the tomato skin and all into it and the skin comes off and rolls up like a toothpick. Easy enough to find them while you're cooking. I do it her way sometimes, but I run some water over the frozen tomato to remove the skin first, because I don't like to look for the peels.
