Recipe: Jam Shortbread Cookies (Better Homes and Gardens Cookbook, 1970's)

JAM SHORTBREAD COOKIES
1 cup shortening
1/2 cup granulated sugar
1/2 cup brown sugar
2 egg yolks
3 tablespoons milk
2 teaspoons vanilla
2 2/3 cups sifted all-purpose flours
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup raspberry preserves
Cream shortening and sugars together; beat in yolks, milk, and vanilla; set aside.
Sift together dry ingredients; add to creamed mixture. Chill 1 hour.
On well floured surface roll half the dough at a time to 1/8-inch thick; cut with 2-inch cutter; cut small hole in center of half. Place 1/2 teaspoon preserves on each plain cookie; top with cut out one; seal edges.
Bake on ungreased cookie sheet at 350 degrees F for 10-12 minutes.
Makes 42 cookies
