Recipe(tried): How to prepare fresh brussel sprouts

I am not sure if you are wanting a recipe such as a casserole using brussel sprouts... here are some basics.

When picking your brussel sprouts, pick ones that are close to the same size so they will cook evenly. I personally prefer the smallest ones.

Clean them under cold running water and trim them before cooking. Trim off the bases (which usually turn brown between the fields and the kitchen.) Also peal off outer leaves that have come loose or turned brown.

If you picked all small brussel sprouts, you can cook them whole. If you picked large brussel sprouts, it is good to slice them in half before cooking.

To cook pick a pan that is large enough to hold your brussel sprouts covered with water. Add a touch of salt to the water.

Bring the water to a full boil and then add the brussel sprouts. Cover the pan and reduce the heat enough to let the water boil slightly for approximately eight to ten minutes. You don't want to overcook the sprouts or they will become mushy. The sprouts will be cooked when you can pierce them with a fork. Drain well before putting the sprouts into a serving dish.

You could garnish the sprouts with butter or a cheese sauce if you want before serving. Or, maybe a pecan sauce.

To make a pecan sauce, melt 3 TBS margarine (per pound of sprouts) in a small saucepan. Add 1/4 C pecans and brown the pecans in the margarine. Do not let them burn. Pour the pecans over the cooked brussel sprouts and serve.
