Recipe: Iced Banana Cookies

Iced Banana Cookies
rec.food.cooking/Elizabeth Falkner (1998)
Makes 40 cookies

3/4 cup vegetable shortening
3/4 cup brown sugar
1 egg
2 ripe bananas; mashed
1/2 tsp vanilla extract
1/2 tsp banana extract
1/4 tsp salt
1 tsp baking soda
2 cups all purpose flour

6 Tbsp brown sugar
1/4 cup milk or cream
1/4 cup vegetable shortening
1/2 tsp vanilla extract
1 to 2 cups powdered sugar

Cream shortening and brown sugar
Add egg, mashed banana, vanilla and banana extract; beat well.
Add salt, baking soda, and flour; beat well.
Drop by teaspoonfuls on greased cookie sheet.
Bake at 375 for 10 minutes

Combine brown sugar, milk, and shortening into saucepan, and bring to boil
Remove from heat.
Add vanilla and enough powdered sugar to make a thin glaze.
Drizzle over cookies.
