Recipe(tried): Individual (Cupcake Size) Cheesecakes

INDIVIDUAL CHEESECAKES

3 pkgs (8 oz each) cream cheese (softened)
1 1/3 cups sugar
4 eggs
2 tsp. vanilla
vanilla wafers
pie filling (for topping), if desired

Beat cream cheese on meduium until smooth. Add sugar beat again until smooth. Add eggs one at a time then add vanilla.

Place a Vanilla Wafer in the bottom of a cupcake paper. Fill about half full with cheesecake mixture.

Bake at 350 degrees for 10 to 15 minutes. Let cool and refridgerate.

I use Cherry, Strawberry or Blueberry canned pie filling as topping.
