Recipe(tried): Indonesian Lamb Curry (Kerie Kambing) (Woman's Day, 1970's)

INDONESIAN LAMB CURRY (KERIE KAMBING)

1 1/2 pounds lamb, cut into 1 inch pieces
1/4 cup cooking oil
1 onion, sliced
1 tablespoon curry powder
2 teaspoons ground coriander
2 cups coconut milk, low fat if available
2 garlic cloves, minced
Graded rind of 1 lemon
Salt and pepper, to taste

Fry meat in hot oil for 5 minutes.

Add onion, curry powder, and coriander, and fry for 5 minutes more.

Add coconut milk, garlic, and lemon rind; reduce heat; cover and cook for 1 hour, or until meat is tender. Season to taste.

This is a very delicious and easy to make dish.

Note: Curry is made in Indonesia with coconut milk and lemongrass, in addition to curry powder or such traditional curry spices as ground coriander and cumin seed.
