Recipe: One-Pot Beef and Pepper Dinner (using ground beef and rice)

1 pound extra lean ground beef
3 cloves garlic, minced
3 cups green bell pepper, chopped
2 cans (14 1/2 oz. each) Italian tomatoes
2 cups water
1 (6 oz.) can tomato paste
8 tablespoons shredded fat-free Parmesan cheese, divided use
1 tablespoon garlic salt
1/4 teaspoon pepper
1 cup instant brown rice, uncooked
In a large nonstick saucepan coated with nonstick cooking spray, cook beef over medium heat until no longer pink; drain.
Add garlic; cook and stir for 1 minute. Add green pepper; cook and stir 3 minutes longer.
Stir in the diced tomatoes, water, tomato paste, 2 tablespoons Parmesan cheese, garlic salt and pepper. Bring to a boil. Stir in rice. Remove from the heat. Cover and let stand for 5 minutes.
Sprinkle with remaining Parmesan cheese.
Makes 6 servings
