Recipe: Irish Potato Candy (2)

Here are a couple of recipes. I think my 3-year-old could do it, at least she'd love to try (although most of the powdered sugar won't be in the bowl), so I think first graders could. Have fun!

IRISH POTATO CANDY

1# (box) confectioners sugar
1/4 pound margarine, softened
1 t. vanilla
1 t. milk
1/2 to 1 c. grated coconut
Cinnamon

Sift sugar, mix well with margarine, milk and vanilla. Keand until smooth with your hands. Add coconot and more milk as needed. Shape into pieces about 3" long to look like little sweet potatoes. Roll in cinnamon. Refrigerate.

IRISH POTATO CANDY #2

4 oz. cream cheese
2 T. butter
1# confectioners sugar
1/2 c. coconut, optional
Cinnamon and sugar mix

Mix cream cheese and butter until creamy. Add coconut and confectioners sugar. Knead until well blended. Roll dough into balls. Roll balls in the cinnamon-sugar mix. Serves 6.
