This is a recipe I found on the Internet a long time ago.. It is very good.. Different and richer than most. Everyone that tries it asks me for the recipe. Makes two loaves..
Irish Soda Bread
4 cups flour
1 cup sugar
4 teaspoons baking powder
3/4 teaspoon baking soda
1 tablespoon caraway seed
1 cup raisins (soaked and drained)
3 eggs
16 ounces of sour cream
1 cup milk
Sift and mix (whisk) together the dry ingredients( first six) in a large bowl. Beat eggs and combine them with dry mixture, first pouring into a 'well' in center of the dry ingredients. Add sour cream and raisins, then add milk slowly while mixing with a wooden spoon so that all batter is moistened.
Grease and flour two 9x5 loaf pans. Transfer batter to pans.(The batter will be too stiff to pour but not dry enough so that it can be formed into a loaf without a pan). I spray pans with PAM
Bake at 350 for 45 - 50 minutes until knife inserted into center comes out clean. I found that it is best to have all liquid ingredients at room temperature. Cool and wrap in plastic wrap. This bread is good toasted.

(by request)for a 'soup and bread' fund raiser for our local Arts Council. It was a hit last year. Marge/NC.
