Serving Ideas : Can be served warm or at room temperature.Italian Easter Pizza:
rec.food.cooking/Judi Mancuso (1993)
Make your own pie crust mixture--I use regular round pie plates for these--some people use deep pizza pans--make enough crust to cover the bottom and up the sides and to make a lattice work on top--of whichever type of dish you please.
Filling for 2 -9 inch pie plates:
Layer:
Bottom Layer: Half of this mixture: 1 lb. ricotta mixed with 1/2 cup mixed cheeses (mozzarella, provolone, parmesan, Romano), 2 eggs, salt and pepper
Next Layer: Italian ham--diced very fine (I buy it in a block instead of slices)
Next Layer: Hot Pepperoni--coarsely chopped (sometimes I use hot Italian Sausage, cooked, broken up fine, and drained--your choice)
Next Layer: Quartered pieces of hard salami
Next Layer: Shredded mozzarella and provolone cheese
Next Layer: 2 hard boiled eggs (crumbled)
Next Layer: The other half of the mixture used in bottom layer
With pie crust, do a lattice work on top and brush with egg white.
Sprinkle liberally with parmesan/Romano cheese
Bake about 45 minutes until bubbly. Can be served hot or cold.
Happy Baking!
Betsy
