This receipe is good, however if you are using fresh tripe it is recommended you clean and boil it 3 times and then add the sauce. We prefer to use tomatoe paste, stewed tomatoes, garlic, oregano, basil, oinon and sliced cooked sausage. The sausage addes a special flavor. This takes longer to cook but it's well worth the wait.
