Recipe(tried): Tripe

This is my family's recipe for tripe.
It NEVER smells good while it's cooking, so you're not doing anything wrong if it smells pretty bad.
It always tastes great though, so enjoy!

2 pounds honeycomb beef tripe
1 teaspoon salt
1 large onion, sliced
1/4 cup olive oil
3 cups hot Marinara sauce

1 large, deep pot - for boiling the tripe
1 deep skillet

Rinse the tripe and place it in a large pot.
Cover it with water and add the salt.
Bring to a boil, then lower heat and simmer, uncovered, for two hours until tender, stirring occasionally.
A word of warning; it won't smell very good at this point!
Drain the tripe,rinse it well and slice it into 1/4" wide strips.
In a deep skillet, heat olive oil over medium heat. Add the onion and saut until soft.
Add the tripe and saut about 10 minutes.
Stir in the tomato sauce and stir to coat with the sauce.
Cover and simmer over low heat about 10-15 minutes.
Serve over hot, cooked pasta.
