Recipe: It's a Wonderful Loaf (meat loaf using ground chicken, ground beef and grated vegetables)

1/4 cup ketchup
1 tablespoon brown sugar
1/2 teaspoon dry mustard powder
3/4 pound skinless ground chicken or turkey
3/4 pound extra-lean ground beef
1 cup Italian-style dry bread crumbs
1/2 cup peeled, grated sweet potato or carrots
1/2 cup unpeeled, grated zucchini
1/2 cup minced onions
1/4 cup chopped fresh parsley
1/4 cup milk (1% or 2%)
2 egg whites
1 teaspoon dried thyme
1/2 teaspoon dried sage
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Combine first 3 ingredients in a small bowl. Set aside.
Using your hands, combine all remaining ingredients in a large bowl. Mix well. Pat mixture into a 9x5-inch loaf pan. Spread ketchup mixture evenly over loaf.
Bake, uncovered, in a 350 degree F oven for 1 hour and 10 minutes, until meat is browned and juices run clear.
Pour off liquid in bottom of pan and remove loaf. Slice into 8 pieces and serve immediately.
Makes 8 servings
Per serving: 200 calories, 4.3 g fat, 1.4 g saturated fat, 22.6 g protein, 17.5 g carbohydrate, 1.3 g fiber, 44.4 mg cholesterol, 514.1 mg sodium % calories from fat: 19
