Dear Jean, There are endless combinations of fish, meats, cheeses, vegetables, and fruits both hot and cold, that can be used in making an Antipasto. When having company and an Italian meal, I always serve a Antipasto. Company is always impressed by this and children love the option to choose a variety of food. I always use a large,pretty serving platter. You can use either round or oval. I prefer round. I always line the plate with fancy leaf lettuce, and add additional foods on top. Arrange foods in a decorative manner, rotating colors of foods. I like to use a flat "dessert" size plate or round salad plate as the Antipasto plate. Here are some suggestions:
Thin sliced Italian Salami and Ham rolled
Pepperoni, sliced Provolone cheese,cubed
anchovies,rolled tuna fish sliced red beets Swiss Cheese rolled artichoke hearts (marinated) you can buy these jarred
marinated mushrooms (you can buy these jarred)
roasted peppers or pimento peppers (purchase jarred)
hard boiled eggs, halved or deviled eggs
Ceci Beans (also called Garbanzo or Chick-Peas) purchased in cans
Marinate or mix these with olive oil,garlic,wine vinegar, salt and pepper
Peperoncini (peppers in jar)
boiled shrimp
Black Olives Green Olives
These are the easiest ideas for you. I do make some marinated foods myself. If you would like any of these recipes let me know. I put cruets of oil and vinegar on the table for guests if they wish to use.
