SWEET POTATO, APPLE AND HAM BAKE
2 tablespoons olive oil
2 tablespoons minced shallots
1 garlic clove, minced
3 sweet potatoes, peeled and chopped into 1-inch dice
2 McIntosh apples, cored, peeled and chopped
1/2 cup apple juice or chicken broth
1 cup ham slices, chopped
1 tablespoon olive oil
1 cup bread crumbs
1 tablespoon fresh sage leaves, chopped
Preheat oven to 350 degrees F. Grease a 2-quart casserole dish and set aside.
Heat a large skillet over medium heat and add olive oil. Add the shallot and garlic and cook 2 minutes.
Add potatoes, apples, juice or broth and reduce heat to low. Cover and cook for 15-20 minutes until vegetables are tender.
Transfer mixture to a food processor and process until smooth or mash by hand. Stir in the chopped ham and spoon the mixture into the prepared casserole dish. Smooth the top and set aside.
In a small bowl, mix the bread crumbs, olive oil and sage until combined and sprinkle over the casserole.
Cover and bake for 30 minutes, then uncover and bake for 15 minutes more until top is golden brown.
