Recipe: Jicama Orange Salads, Salad of Jicama, Orange, Onion and Pepper

For those who may not be familiar with Jicima, Jicama (pronounced "HEE-ka-ma") is a root
vegetable with a fresh, apple-like flavor and
texture. It usually grows in tropical climates
and looks something like a turnip before it is peeled.

Jicama Orange Salad

2 c. diced, peeled jicama (1/2-inch dice)
3 peeled seedless oranges, cut into sections (about 1 c.)
2 tbsp. freshly squeezed orange juice
1/4 c. finely chopped red onions
3 tbsp. finely chopped red bell pepper
3 tbsp. chopped fresh cilantro
1/2 tsp. salt
3 turns freshly ground black pepper

Combine all the ingredients in a bowl and toss until thoroughly blended. This can be made a day ahead and stored in the refrigerator in a airtight container make about 3 cups, about 4 salad servings.

Salad of Jicama, Orange, Onion and Pepper

7 ounces jicama, peeled
1 navel orange, peel and all pith removed
1/2 cup diced red onion
1 medium red bell pepper, cut in 1/2 inch squares
3/4 teaspoon ground chili pepper
1/4 teaspoon salt
2 tablespoons cider vinegar
2 tablespoons oil

Cut jicama into 1/4 inch dice. Cut orange in cubes about the same size; mix in bowl with jicama, onion and pepper. Blend chili pepper, salt and vinegar; add oil and mix. Pour over salad and toss. Cover
and refrigerate for one hour or longer.
Serves 3.
