Recipe: Cranberry Pineapple Apple Salad (with pecans)

CRANBERRY PINEAPPLE APPLE SALAD

2 cups fresh or frozen cranberries*
1 cup water
1 cup sugar
1 (3 oz) pkg. cherry, strawberry, or raspberry Jello
1 cup cold water
1/2 cup chopped pecans
1/2 cup diced apple
1/2 cup minced celery
1/2 cup drained, crushed pineapple

Cook cranberries in 1 cup water until skins burst.

Remove from heat and add sugar and Jello. Stir until dissolved. Add 1 cup cold water. Refrigerate until it begins to thicken.

Add remaining ingredients and chill until firm.

May be served plain or with mayonnaise.

*You may use 1 can whole cranberry sauce instead of fresh cranberries. Dissolve sugar and Jello in 1 1/4 cups boiling water. Stir in the cranberry sauce. Proceed as above.
