Recipe: Jiffy Nutmeg Cake - A One-Bowl Cake (laof cake using rum or brandy)

JIFFY NUTMEG CAKE - A ONE-BOWL CAKE

2 cups all-purpose flour, sifted
1 1/2 cups sugar
1 tsp salt
2 tsp baking powder
1 1/2 cups heavy cream
3 eggs
2 tsp grated nutmeg
2 tbsp dark rum or brandy

Preheat oven to 350 degrees F. Grease and flour 9x5x3-inch loaf pan.

Sift flour, sugar, salt, and baking powder into a mixing bowl. Add cream, eggs, and nutmeg, and beat for 3 minutes. Add rum or brandy and beat for 1 minute longer. Then pour into prepared loaf pan.

Bake for 1 hour, or until a toothpick inserted in center comes out clean. Cool on cake racks and frost or enjoy plain.
