Recipe: Linguine with Vodka-Herb Sauce (using onion and fresh herbs)

LINGUINE WITH VODKA-HERB SAUCE

3/4 pound linguine, uncooked
2 tablespoons butter
1 onion, sliced thin
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh tarragon
1 tablespoon chopped fresh basil
1 cup heavy (whipping) cream
1/2 cup vodka

Cook pasta according to package directions; drain.

Meanwhile, melt butter in large skillet over medium heat. Add onion and saute until tender, 10 minutes. Add herbs and saute 1 minute more.

Add cream and vodka to skillet and simmer until sauce thickens, 8 minutes.

Add pasta and cheese and toss to coat. Season to taste with salt and pepper. Serve immediately.

Makes 4 servings
