Recipe: Joe's Special

You are in luck, I was looking through old Sunset cookbooks for the spinach mushroom pie that was previously asked for, and came across this. Looks good. I always thought Joe's Special had oysters in it!

Joe's Special

2 lbs ground beef chuck, crumbled
2 tbs. olive oil or salad oil
2 medium sized onions, finely chopped
2 cloves of garlic, minced or mashed
1/2 lb mushrooms, sliced (optional)
1 1/4 tsp salt
1/4 tsp each nutmeg, pepper,and oregano
1 package (10 ounce) frozen spinach, thawed and well drained; or 1/2 lb fresh spinach, washed, drained and chopped (about 4 cups)
4 to 6 eggs

Brown ground beef well in oil in a large frying pan over high heat. Add onions, garlic, and mushrooms (if used); reduce heat and continue cooking, stirring occasionally, until onion is soft. Stir in seasonings and spinach; cook about 5 minutes longer.
Add eggs. Stir mixture over low heat just until eggs begin to set.

Makes 4-6 servings.
