Recipe: Joe's Special

Joe's Special

Weirdest thing... I found a recipe card in the cushion of a dining room chair my Aunt gave me. I have not tried it yet, but plan to soon. I think it compliments the protein diet I am currently on:

1 cup chopped onions
2 tsp. olive oil
1lb ground round
1 tsp. seasoning salt
1 cup chopped spinach (squeezed dry)
6 whole eggs
1/4 cup Asiago or Romano cheese
1/4 cup parmesan cheese

1. Saute onions in olive oil over medium-high heat.
2. Add ground round and season with salt.
3. Cool until medium-well. Break up with fork.
4. Add spinach and whole eggs; stir and cook till done but not dry.
5. Sprinkle with cheese. Serve
6. ENJOY.
