Recipe(tried): Joe's Special - Variation

Joe's Special

As a professional cook I have prepared "Joes" many times at many places. My favorite variation is made with breakfast sausage.

1/4 cup diced onion
1 Tbsp. oil
4 oz. cooked crumbled sausage
handful chopped spinach (squeezed dry if frozen)
3 eggs, beaten
grated parmesan cheese

Saute the onion in the oil in a hot 10-inch skillet. When it is translucent add the sausage and heat. Add spinach and heat.

Have the pan quite hot and add the beaten eggs. Cook the eggs to the desired doneness and add a a handful of grated parmesan cheese.
