Of all the roll out sugar cookies I have tried, this remains my favorite. My younger son says they are the only ones not related to tasting like rocks! My mom made these for years before me so I guess it is well tested.

Sugar cookies

1 cup butter, softened
1 1/2 cups powdered sugar
1 egg
1 teaspoon vanilla
1/2 teaspoons almond extract, optional
2 1/2 cups flour
1 teaspoon soda
1 teaspoon cream of tartar

Mix thoroughly the butter, sugar, egg, vanilla and almond, if using. Blend in flour, soda and cream of tartar. Cover and chill 2-3 hours. Heat oven to 375. Divide dough in half. Roll each half 1/4inch thick on lightly floured surface. cut into desired shapes; sprinkle with granulated sugar, if desired. Plalce on lightly greased baking shee. Bake 7-8 minutes or until lightly browned on edge. Makes about 5 dozen 2-2 1/2 inch cookies. May omit sprinkling with the sugar if you are going to decorate when cool.
