Recipe: Jumbo Banana Nut Muffins (4)

I don't know if one of these will suit:

Jumbo Banana Nut Muffins

2-1/2 cups all purpose flour
3/4 cup sugar
1 tablespoon baking powder
3/4 teaspoon salt

1/3 c butter or margarine

1 cup walnuts chopped

2 eggs
1/2 teaspoon vanilla extract
3 ripe small bananas, cut up
1/3 cup milk

Preheat oven to 40 degrees. Grease six 3" by 1-1/2" muffin-pan cups.

In large bowl, cut butter into flour, sugar. baking powder and salt, until mixture resembles coarse crumbs; stir in walnuts. Set aside.

In a food processor, blend bananas, eggs, milk and vanilla only a few seconds, until bananas are chopped.

Stir banana mixture into flour mixture just until flour is moistened. (Batter will be lumpy.) Spoon batter into muffin-pan cups (Batter will fill cups completely.)

Bake 25 to 30 minutes until toothpick inserted in center comes out clean. Muffins will rise very high. Immediately remove muffins from pan, serve warm. Cool on rack if desired. Makes 6 muffins.

JUMBO BANANA NUT MUFFINS

2 Cups flour
1/2 Cup sugar
1 Tsp baking powder
1 Tsp baking soda
1/4 Tsp salt

1/2 Cup softened butter/margerine

1 Cup broken walnuts

2 Eggs
1 Tsp vanilla essence
1 1/2 Cups mashed ripe bananas
1/4 Cup milk

Preheat oven to 375 F (190 C). Grease muffin cups. Stir together flour, baking powder, baking soda and salt. Separately cream butter and sugar until light and fluffy. Beat in eggs, and stir in bananas, milk and vanilla. Add dry ingredients and stir to combine. Add walnuts and stir. Pour into muffin cups. Bake 25-30 minutes. Cool for 5 minutes before eating.

Jumbo Banana-Nut Muffins

2 cups of all-purpose flour
3/4 cup of granulated sugar
1 teaspoon of baking soda
1 teaspoon of salt

1/2 cup of chopped pecans

2 large eggs, beaten
1 1/2 cups (about 3 medium) mashed bananas

Preheat to 375 degrees F. Lightly grease jumbo muffin cups.

In a large bowl, blend together the flour, sugar, baking soda, pecans, and salt. In a medium bowl, beat together the eggs and bananas. Combine the two mixes, blending until the dry ingredients are just moistened.

Spoon the batter into the prepared muffin cups, filling each about three-quarters full. Bake for 25-30 minutes or until the tops are golden brown

Jumbo Banana Nut Muffins

1 2/3 cup All-purpose flour
2 tsp Baking soda
1/2 cup Packed brown sugar

1/2 cup Walnuts, chopped

1 c Bananas, medium-large
1 cup Low-fat plain yogurt
1/4 cup Vegetable oil

In large bowl, use fork to mash bananas. Add yogurt, sugar and oil; combine with fork.

In separate bowl, stir together flour and baking soda; add flour mixture and walnuts to banana mixture and stir just until blended. (Batter may be lumpy.)

Spoon batter into greased muffin cups; bake in 200C oven for 25-30 minutes or until golden brown. Let cool in pan on rack for 5 minutes.
