Recipe(tried): Just Like Kozy Shack's Rice Pudding (crock pot)

Desserts - Puddings, Gelatin
My husband loves this store bought pudding so I found this recipe on the net and tried it. He say's it't a match to the real thing! (maybe better)

Just Like Kozy Shack's Rice Pudding

1 cup short-grain brown rice
8 cups milk
1 tsp nutmeg
1 cup sugar
2 eggs
1 cup milk

Place rice, milk, and nutmeg in crock pot. Cook on high for 4 to 6 hours until rice is soft. Mix two eggs with an
additional 1 c milk and add slowly to mix in crock pot along with sugar. Stir well to blend, then cook on high an
additional 2-4 hours or until thickened. Put into separate container, cover with plastic wrap on top surface, and leave to cool.

Tastes best if left for one day before eating, but who can wait that long?

NOTES : To replace the brown rice with white rice, cut the times in half.

I can double it and cook it in my 6-quart crock pot.

Enjoy
