No guarantees, but here are some suggestions:
- When the bread is done, turn the oven off and leave the bread inside another 5 minutes.
- Cool on wire rack set high enough from counter to prevent moisture forming underneath (set on top of cups to raise it if necessary.
- Store bread in a paper bag (the new plastic bags for vegetables - the ones with the little holes may also work).
- If your kitchen is humid try wrapping in a dishtowel.
- Reheat in an oven (about 250F) - spraying with a little water first may help.
Maybe someone else will have tips to share too.
