RAINBOW FINGER JELLO
Source: Kathleen Kallhoff, 1994

"Following is a recipe that my children enjoy very much... be aware that it takes time to make, since all layers of jello must be jelled before the layers can be created. I usually make it for birthday parties."

4 (4-serving size) packages Jello, assorted flavors (I usually use Cherry, Orange, Lemon and Lime.)
6 envelopes KNOX Gelatin (there are 4 envelopes per box of Knox Gelatin so you'll need 2 boxes)
Hot water
1 (14 oz) can Eagle Sweetened Condensed Milk (can use low fat version)

FIRST LAYER:
Mix 1 package (dry) jello with 1 envelope (dry) Knox gelatin in a small saucepan. Add 1 cup of hot water and heat until the gelatin is dissolved.

Pour into a 9x13-inch pan and chill until firmly set.

SECOND LAYER:
While the first layer is chilling, combine sweetened condensed milk with 2 cups hot water. Add 2 envelopes Knox gelatin and heat until gelatin is dissolved. Separate into 3 portions (1 cup each) and allow to cool.

When first layer is firmly set, pour 1 cup of the cooled milk mixture on the top of the first layer (be sure milk mixture is cool enough so the bottom layer doesn't melt!!!) Chill until firmly set.

THIRD LAYER:
Make another jello layer, mixing the jello and gelatin with 1 cup hot water and heating. Allow to cool (to room temperature), then pour on top of milk layer. Chill.

FOURTH AND FIFTH LAYERS:
Repeat 2nd and 3rd layers, ending with a jello layer on top. Refrigerate to set.

TIP:
I find it works best to start a jello layer 'cooking' each time I pour a jello layer on top of a milk layer. This helps speed up the process, since it is very important to have each batch cool before pouring onto the chilled jello to avoid melting it.

Lori.NY (02:25:32) : Kitty Litter Cake

1 Spice or German Chocolate Cake Mix
1 White Cake Mix
1 Pkg White Sandwich Cookies
1 Large pkg Vanilla Instant Pudding Mix
Green food coloring
12 Small Tootsie Rolls
1 *NEW* kitty litter box
1 *NEW* kitty litter box plastic liner
1 *NEW* pooper scooper

Prepare cake mixes and bake according to directions (any size pans). Prepare
pudding mix and chill until ready to assemble.

Crumble white sandwich cookies in small batches in blender, they tend to stick,
so scrape often. Set aside all but about 1/4 cup.

To the 1/4 cup cookie crumbs, add a few drops green food coloring and mix using
a fork or shake in a jar.

When cakes are cooled to room temperature, crumble into a large bowl. Toss with
half the remaining white cookie crumbs and the chilled pudding. You probably
won't need all of the pudding, mix with the cake and "feel" it, you don't want
it soggy, just moist; gently combine.

Line new, clean kitty litter box. Put mixture into litter box.

Put three unwrapped Tootsie rolls in a microwave safe dish and heat until soft
and pliable. Shape ends so they are no longer blunt, curving slightly. Repeat
with 3 more Tootsie rolls and bury in mixture. Sprinkle the other half of
cookie crumbs over top. Scatter the green cookie crumbs lightly over the top,
this is supposed to look like the chlorophyll in kitty litter.

Heat remaining Tootsie Rolls, 3 at a time in the microwave until almost melted.
Scrape them on top of the cake and sprinkle with cookie crumbs. This is my
addition--only: spread 5 of the remaining Tootsie Rolls over the top; take one
and heat until pliable, hang it over the side of the kitty litter box;
sprinkling it lightly with cookie crumbs.

Place the box on a newspaper and sprinkle a few of the cookie crumbs around.

Serve with a *new* pooper scooper.

Kelly~WA (11:29:57) :
Children's Lemon or White Cake Mix for Children's Oven (10)

1 cup sugar
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon lemon flavored unsweetened drink powder -- (like Kool-Aid)
1/3 cup vegetable shortening

In a medium bowl, combine sugar, flour, baking soda, salt, and drink
powder. Stir with a wire whisk until blended. With a pastry blender, cut
in shortening until evenly distributed and mixture resembles corn meal.
Spoon about 1/3 cup of mix into each of 10 small containers or ziplock
bags. Seal containers tightly. Label with date and contents. Store in a
cool dry place. Use within 12 weeks. Makes 10 packages

Children's Lemon Cake Mix.

To use:

1 pkg. Children's Lemon Cake Mix
4 teaspoons water

Preheat mom's oven to 375=B0f. If using child's play oven follow manufacturers directions for baking cakes. Grease and flour a 4 inch miniature cake pan. In a small bowl, Combine Children's Lemon Cake Mix and water. Stir with a fork or spoon until
blended and smooth. Pour mixture into prepared pan. Bake 12 to 13
minutes in Mom's oven or as directed in play oven. Remove from oven.

Cool in pan on rack for 5 minutes. Invert cake onto a small plate;
remove pan. When cool frost with Children's White Frosting if desired.
Serves 2 children.

NOTES : It takes no genius to see that ANY flavor of unsweetened drink
mix powder can be used for a wide variety of flavors. For a White Cake
Mix omit the powder. If you like, a drop or two of vanilla might be added at the time the cake is prepared.

MED/TN (09:15:51) : DOLL SALAD

Body: 6 slices tomato aspic or cranberry sauce
3 c chicken salad
6 washed and drained leaf lettuce leaves
1 lb shaved ham
Legs: 12 2-inch stalks of celery
1 small jar pimientos
Arms 12 1 1/2-inch stalks of celery
Arms& Legs: 6oz soft cream cheese
Feet: 6 black olives, cut in half
Hands: 6 green olives, cut in half
Face: 3 hard boiled eggs, cut in half
3 radish circles, cut in half
12 cloves
6 raisins
Hair: 1 c shredded carrots
6 bow tie pastas, cooked

Directions: This recipe makes six dolls. To build the dolls, start by laying a circle of tomato aspic on a clean plate. Take an ice cream scoop and scoop chicken salad onto tomato aspic with flat side down. Next loosely lay a piece of lettuce over chicken salad to make a fluted skirt. Fill celery sticks with cream cheese and lay the pimientos on the longer pieces vertically to make red and white stockings. Above the lettuce lay shaved ham to form a blouse and celery for arms. Now below the lettuce lay the striped celery stalks to form legs. Place half a black olive at the bottom of each stocking to form shoes. Go back and lay the green olives that are notched to look like hands at the end of the arms. It is now time to bring the doll to life with the face. Above the ham, lay half of a boiled egg white side up and small oval side down. This looks like a chin. Stick two cloves in the egg white to make eyes, a raisin for a nose, and a piece of radish for a mouth. Scatter the shredded carrots above the egg for hair. Use the bow tie pasta for a "hair bow" and you have a completed edible doll.
